In our house, Sunday mornings always started in the kitchen. Before anyone was properly awake, there would be the sound of a cupboard opening, the kettle going on, and someone looking for the favourite mixing bowl.
My grandmother never hurried breakfast. She would open the curtains, put the radio on, and tell us about the little bakery she used to visit on her way to school. We had heard the story before. We always asked for it again.
The bowl that came with us
When I moved into my first apartment, that mixing bowl came too. It survived a tiny kitchen, several house moves, and more than a few ambitious weekend breakfasts. Somehow, pancakes still feel like the best use for it.
These days, I make them with the window open and a cup of coffee nearby. There is usually a book on the table, a little flour on the counter, and absolutely no agreement about who gets the first pancake.
Anyway, here is the recipe.
Sunday pancakes
What you’ll need
- 2 cups flour
- 2 tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- 1½ cups milk
- 3 tbsp butter, melted
How to make them
- Whisk the flour, sugar, baking powder and salt in a bowl.
- In another bowl, whisk the eggs, milk and melted butter.
- Fold the wet ingredients into the dry ingredients.
- Cook the pancakes for 2–3 minutes per side.
